Christmas cake

 

In the Shed Wireless Episode 10, Season 6, Derek Bullock from the Australia Motorhome and Caravan Association shares a great Christmas recipe that we can all manage – the 3 ingredient Christmas Cake.

Derek says it’s as very flexible recipe and he’s even substituted some of the milk with prune juice, making a very rich and dark Christmas cake.

 

 

Ingredients (3)

  • 1kg (5 1/2 cups) mixed dried fruit
  • 600ml chocolate or iced coffee flavoured milk
  • 300g (2 cups) self-raising flour

Equipment
A medium cake tin (22cm across).

Step 1
Combine the dried fruit and chocolate or iced coffee flavoured milk in a large bowl. Stir to combine. Cover and place in the fridge overnight to soak.

Step 2
Remove the bowl from the fridge and set aside for 30 minutes to come to room temperature.

Step 3
Preheat the oven to 180C/160C fan forced. Grease a 22cm round cake pan. Line base and side with baking paper.
Step 4
Stir the flour into the fruit mixture. Stir until just combined. Pour into the prepared pan. Smooth the surface. Bake for 1 hour 30 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.
